Ingredients

    2.0 medium (2-1/2" dia) Onions, raw
    2.0 tbsp Crisco Pure Vegetable Oil
    2.0 sweetpotato, 5" long Sweet potato
    0.1 cup Sauce - Thai Red Curry Sauce - Trader Joe's
    1.0 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
    1.5 cup Bell peppers (Green, Red, Yellow, Orange)
    1.0 serving Nature's Greens, Collard Greens, 3 Cups
    8.0 cup Chicken stock, home-prepared
    1.0 tbsp Salt
    1.75 cup Chick Peas

Directions

Sauteed chopped onions and sweet potatoes in oil on medium for 10 mins. Add the red curry paste and stir until coated. Add broth, chopped roasted red pepper, cooked chick peas, and cooked quinoa. Simmer for 20mins add chopped collard greens and season to taste with sea salt.
