Ingredients

    3.0 cup Cauliflower, raw
    2.0 clove Garlic
    1.0 cup, chopped Onions, raw
    1.0 package (10 oz) Spinach, fresh
    1.0 serving 1 Med. Green Bell Pepper
    74.0 gram(s) bell pepper, red, sweet, raw
    2.0 cup simply nature vegetable stock
    3.5 cup happy harvest diced tomatoes
    7.0 cup dakota's pride chick garbanzo beans
    30.0 gram curry powder
    0.08 cup maple syrup
    1.0 cup Thai kitchen lite coconut milk

Directions

Sautee onions and peppers for 4 to 5 minutes then add garlic and cook for another minute. Add onion and pepper mixture to slow cooker. Add all other ingredients except cauliflower, spinach and coconut milk. Cook for 3 hours on high. After 3 hours add cauliflower florets and cook for another hour. Add spinach and coconut milk and cook for 10 minutes until spinach is wilted. Serving Size: 2 cups
