    6 serving Egg Beaters, original - 1/4 cup
    2 pat (1" sq, 1/3" high) Butter, salted
    .5 cup, chopped Onions, raw
    6 oz HT Marinated Artichokes
    1 serving Cheese - Cottage Cheese (Low Fat 2%) - Daisy brand - 1/2C
    60 gram(s) Kraft Low Moisture Part Skim Shredded Mozzerella Cheese (by CHERRYSNOW)
    6 tsp Cheese (Grated) - Parmesan Cheese - Kraft 100%
    1 package (10 oz) yields Spinach, frozen
    0.25 tsp Ground Cayanne Pepper (by SIRCHRISRR)
    2 serving Garlic, Minced, Spice World (garlic,water,phosphoric acid) (by HANSOMEBOY)


You can reduce fat by choosing to saute onions and garlic using olive oil pan spray. You can reduce sodium by using frozen artichokes instead of marinated.


Saute onions and garlic in butter, drain artichokes and spinach. Combine with eggs, cheeses, and pepper. Spoon into a greased muffin pan. Bake at 350 F for 25-30 minutes.

Serving Size: makes 6 servings of 2 muffin sized quiches
