Ingredients

    5.0 cup Beans, black
    2.0 cup, chopped Onions, raw
    0.5 cup, grated Carrots, raw
1.0 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
0.5 cup (8 fl oz) Barbecue Sauce
    2.0 tbsp Olive Oil
3.0 cup Brown Rice, medium grain
1.25 cup Quaker Oats - Quick 1 Minute - Dry
3 tbsp Carribean spice mix with roasted garlic or seasoning blend of your choice.

Directions

If using canned black beans, reserve liquid. I prefer cooking from dry and using that liquid. Puree or mash most of the beans using bean liquid to help in a blender. Combine all ingredients and mix well. Makes 5 loaves. Bake in 400 degree oven for 40 minutes. I find it works well in my silicone pans sprayed with cooking spray.
