Ingredients

    6 serving Fish - Tillapia 3 oz.
    6 cup Spinach, fresh
    1 clove Garlic
    1 tbsp Garlic powder
    1 tsp Onion powder
    0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    .5 tsp Crushed Red Pepper Flakes (by DRSUMMERS)
    2 serving Boar's Head - Smoked Gouda Cheese - 1 oz
    1 tsp McCormick Old Bay Seasoning (by KATANMOL)

Directions

Ready the broiler on Medium. Lightly oil a small baking dish and set aside. Saute the red onion until translucent. Add the garlic, turn temp to med-low and saute for 1 minute. Add the garlic powder, red pepper flakes, onion power, stir. Add spinach and old bay seasonings and saute until slightly wilted. Mix in the smoked gouda until slightly melted. Salt and pepper the tillapia, place 2 tbls of mix into the middle of the fish fillet and roll up. Secure with a toothpick if needed or place seam side down on the lightly oiled baking dish. Give a quick spray of Pam or a light drizzle of olive oil over fish. Broil until fish flakes and slightly brown.
