Ingredients

    90 Grams Chorizo thin sliced
    80 Grams Onions raw peeled cut in wedges
    3 small Sweet potato peeled and cubed
    800 Grams pumpkin peeled and cubed
    0.25 cup lentils boiled over
    4.0 clove Garlic peeled and crushed
    2.0 serving chicken stock cubes
    3.0 tsp dryed Thyme
    Dryed Chillies

Directions

Boil the lentils and chorizo until soft Pre heat the oven gas mark 8 In a roasting tin add the potatoes, Pumpkin, Onion, garlic, herbs, chillies And roast until soft (30/45minutes ) In a large pot add the roasted veg and the stock cubes Add boiling water ( cover the veg) Liquidise add the cooked lentils and chorizo Taste and season to your taste buds Serving Size: 4 servings
