Introduction

Ingredients

    1.75cup (1 can draind & rinsed) Cut Green Beans
    3 large Egg, fresh, whole, raw
    8 cup, grated Zucchini (seeds removed)
    1 cup Ricotta Cheese, part skim milk
    .25 cup, crumbled, not packed Blue Cheese
    .33 cup, crumbled Feta Cheese
    1 large whole Tomatoered, (diced)
    .33 large (2-1/4 per lb, approx 3- Peppers, sweet, red, fresh
    1lb Jennie-o turkey breakfast sausage
    2.5 cup cooked Orzo Pasta (yeild from 1 cup dry)
    1 can (10.5 oz) Cream of Mushroom Soup 98% Fat Free (Kroger )

Tips

Substitue green beans with your favorite veggie. I sprinkled some bread crumbs over the top in order to see the browning easier. This is a full baking dish so it took a bit longer to cook than I anticipated. Keep an eye on it after you remove the foil.
Prep all or partially ahead of time.


Directions

Cook Orzo per pkg instructions(eldante') Brown sausage draining any leftove fat. Grate zucchini, Dice pepper & tomato.
in a large bowel beat eggs, add all the cheeses, cream of mushroom soup & mix. Add the rest of the ingredients mix everything together well. Pour mixture in a sprayed 9"x12" baking dish & spread over evenly. Bake @ 350 covered with foil for approx 1 hour. Uncover and bake for another hour until slightly browned on top. Remove from oven and let rest for a few minutes. Cut into 12 servings and eat!
