Introduction

Ingredients

    4.0 cup (1" pieces) Cauliflower, cooked
    0.5 cup Baked Potato (baked potatoes)
    0.1 cup Silk Pure Almond Milk - Unsweetened Vanilla Almond Milk-or any other milk that you like.
    1.0 cup Spinach, fresh
    0.3 tbsp chopped Shallots

Directions

Steam cauliflower in one inch of boiling water for about 5 minutes till soft. Add baked potato and mash or puree with the cauliflower. Grate shallot into it and add fresh spinach and almond milk. Sprinkle with fresh ground black pepper. I like to use on micro planer for the shallot. You can add garlic and salt if you like. Without salt it goes great with spicy foods and you don't miss the salt. I also add shaved or grated Parmesan on top.
