Introduction

This is an adaptation of a recipe my Dad has made for years. His had a full cup of sugar, that I've cut by 3/4, and a full cup of oil that I've replaced with apple sauce. It's a great cake to serve with coffee, not overly sweet. This is an adaptation of a recipe my Dad has made for years. Tips

Directions

Peel and cut the pears into small cubes. Mix the wet ingredients in one bowl and the dry in another. Slowly add the dry to the wet, folding in the ingredients. Don't beat or the mixture will develop too much gluten. Fold the walnuts in last. Pour into a bunt pan, or two loaf pans that have been sprayed with cooking spray. Bake at 350 for 50 - 60 minutes. Invert onto a plate for serving.
