Ingredients

    4 medium to large red beets, roasted, peeled and diced
    1 head roasted garlic (~15 cloves)
    ¾ c of apple cider vinegar or champagne vinegar
    3 thai chilies, minced
    1⁄3 c coconut sugar
    1⁄2 small yellow onion, diced
    1⁄2 tsp Himalayan salt
    1 tsp smoked paprika
    1⁄4 tsp ground coriander
    1⁄4 tsp ground cloves

Directions

Place all the ingredients into a heavy saucepan over medium heat and bring to a simmer.
Loosely cover and simmer for 30-35 minutes, until fragrant and thickened.
Puree with an immersion blender or small stand blender until smooth.
Store in the fridge for up to 30 days or can 20 minutes in a waterbath
