Ingredients

    12 large Egg, fresh, whole, raw
    454 gram Jennie-o turkey breakfast sausage
    8 serving Cheese Sargento Pepper Jack Slices
    10 serving Onions, yellow, raw 1 oz.

Directions

One large yellow onion, peeled, sliced and diced.
Add 1 tsp olive oil to saute pan
Add diced onion to heated pan, stir and cook for 5 minutes.
Add one package 1 pound turkey sausage to pan with onion.
Cook medium heat. Use a spatula to break sausage into smaller pieces. Cook until all sausage is done. About 10 to 15 minutes.
Use glass casserole dish, 15 x 10 or 14 x18. Spray bottom and sides with cooking spray.
Dump all the cooked sausage into the greased casserole dish.
Set Oven to 350.
Crack one dozen large eggs into a bowl and whip the eggs two minutes by hand or mixer. Add tsp salt and tsp black pepper to egg mixture. Pour egg mixture over sausage and slight mix together. Top mixture with slices of pepper jack cheese. Completely cover the top of mixture with cheese slice, do not overlap the slices. Place dish in heated oven 350 degrees. Bake 20 minutes or until eggs are completed done. Be careful not to overcook eggs.

Serving Size: Makes 8 to 10, 4 inch pieces
