Introduction

Kid friendly, and a good source of protein and calcium. with the whole wheat pasta and garbanzo beans, this recipe is satisfying, and high in fiber, at least as far as mac and cheese goes! Ingredients

    Barilla Plus rotini pasta, 14.5 oz box
    Mozzarella cheese, part skim milk, 1 oz
    4 oz low fat or fat free cheddar cheese
    1/4 cup low fat buttermilk
    1/4 cup chopped onions
    1 cup chickpeas, pureed
    2 tablespoons light margarine

Directions

Boil pasta according to instructions on box. in a large microwave safe bowl mix cheddar and mozzarella cheeses, buttermilk, onions and margarine. Puree chickpeas in seperate bowl and then add to cheese mixture. Microwave for 1 to 2 minutes to melt cheeses. Beat mixture thoroughly. When pasta is al dente, mix cheese mixture into pasta.

* For variation, sometimes I add green peppers, and pureed red peppers. Just be sure to roast the peppers before pureeing, otherwise they won't add as much flavor, and the kids will see the "specks"!
