Ingredients

1.2 pound ground turkey breast
homemade taco seasoning (see below)
2.5-3 cups chicken broth (3 cups will be saucy)
1 jar Newman's Own Mild Salsa (16oz)
8 ounces Creamette 150 Rotini pasta
1 1/2 cups shredded cheese (I use half sharp cheddar and half Monterey Jack)
Homemade taco seasoning: 1T chili powder, 1.5t cumin, 1/4t garlic powder, 1/4t onion powder, 1/4t oregano, 1t sea salt, 1t black pepper, 1/2t smoked paprika.
Directions
Preheat a large deep skillet over medium heat.
Add ground turkey.
Cook, stirring occasionally until cooked thoroughly.
Stir taco seasoning into ground turkey then stir in stock, salsa and pasta noodles.
Bring mixture to a boil.
Stir, cover and reduce heat to a simmer.
Cook for about 15 minutes until pasta is tender.
Turn off heat and stir in cheese.
Season with additional salt and pepper if needed.
Serve with optional toppings if desired.
