Ingredients

3 TBSP fresh lemon zest
4 Lemon, fresh squeezed, need 3/4 Cup of juice
6 large Egg Yolk
1/4 Cup Great Value No Calorie Stevia
1/4 Cup Lakanto Monk Fruit Sweetener w/ Erythitol
7 TBSP Purity Farms Organic Ghee / Clarified Butter
1TBSP of Arrowroot for thickener if using as a topping.
Tips
Great on top of a lemon cheesecake, on berries, parfaits, pie filling etc.
Directions
1. Wash and zest lemons.
2. Halve lemons, then juice
3. Mix egg yolks and sweeteners
4. Pour in the lemon juice and add the lemon zest. Mix until well combined.
5. Place the bowl over a saucepan with simmering water. Important for water not to touch the bottom of the bowl. Stir constantly until mixture begins to thicken (8-10 minutes).
6. Take off the heat. If planning on using thickener, add to water and mix then incorporate into lemon curd mixture.
7. Add Ghee and mix until melted and well combined. You can pulse on food processor for a few seconds to smooth out mixture if it looks scrambled.
8. Place bowl with curd into a larger bowl filled with ice water and mix until the curd is chilled.
9. When chilled, place in an airtight container. Can be kept for up to 10 days.
