Ingredients

1 tsp Cinnamon, ground
1 tbsp Vanilla extract, imitation, alcohol
1/2 cup Applesauce, unsweetened
1 tsp Baking Soda
1/4 cup semi-Sweet Chocolate Chips
1/2 cup Craisin dried cranberries
1/8 cup Egg White (Naturegg Simply Egg Whites) Per 1/4 cup (about 2 whites)
2 Tbsp Becel Light 50% lighter calorie reduced margarine
1/3 cup Raisins (SunMaid)
1/8 tsp Morton Iodized Salt
1/4 cup Silk cashew milk unsweetened
1 cup Rolled Oats, Large Flakes
3 tbsp Coconut Flour and oat fiber, each
65 grams dried dates
1/2 cup boiled water
Directions
Combine boiled water and dried dates. Let sit for 30 minutes then puree.
Preheat oven to 375 degrees. Mix in becel, applesauce, egg whites, milk, and vanilla. Beat well.
Combine flour, oats, baking soda, salt, and cinnamon in a medium bowl. Gradually add to date mixture. Beat just until combined. Fold in dried fruit, nuts, and chocolate chips.
Drop by tablespoonfuls onto cookie sheets coated in parchment paper or cooking spray.
Bake @ 350 degrees for about 10 minutes or until browned.
