Ingredients

    2 C egg substitute
    salt and pepper
    3 T Olive oil
    2 bell peppers, thinly sliced
    1 medium red onion, thinly sliced
    1 C reduced fat cheddar or colby cheese
    1/2 C salsa

Directions

Whisk egg substitute and eggs with salt and pepper. In 10 inch skillet, with tight fitting lid heat 1 T oil over medium high. Sautee bell pepper and onion, season with additional salt and pepper. Cook 6-8 minutes.

Add eggs and cook, stirring with spatuala until eggs thicken, about 1 minute. Sprinkle cheese on egg mixture. Cover and reduce heat to medium low. Cook for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.

Slide fritatta onto cutting board; slice into 4 wedges. Top with salsa and serve with a green salad.
