Introduction

Ingredients

    20 oz lean beef stew
    1 medium (2-1/2" dia) Onions, chopped
    1 tbsp Olive Oil
    .75 cup Barley, pearled, raw
    1 16 oz bag frozen italian vegtables (zuccini, cauliflower, carrots, beans and peppers)
    1.5 cup pieces Mushrooms, fresh
    chopped fresh parsley, 1/2 cup
    chopped fresh green onions'
    garlic
    salt
    pepper
    dried thyme


Tips

Fresh Herbs are optional, but add nice flavor and nutrition


Directions

Brown Beef and onions in Olive oil. Place all other ingredients in crock pot, top with browned beef. Add water to cover (approx. 6 cups). Season to taste. Cook for 8 hours on low.
