Ingredients

    Zuppa Toscana
    Prep. Time: 0:35
    • 1 lb. ground turkey breast, crumbled
    • 1 quart water
    • 2 cans + ½ cup nsa chicken broth
    • 2 large russet potatoes, scrubbed clean, cubed
    • 2 garlic cloves, peeled, crushed
    • 1 medium onion, peeled, chopped
    • 2 cups spinach
    • Italian seasoning, to taste
    • Fennel seed
    • Red pepper flakes, pepper, to taste


    In a skillet over medium-high heat, brown turkey, breaking into small pieces as it cooks; season with Italian seasonings; set aside.

    Place water, broth, potatoes, garlic, and onion in a pot; simmer over medium heat until potatoes are tender. Remove 3/4 cup of drained potato/potato/garlic mixture to blender or food processor. Add ½ cup additional chicken broth and purée till creamy and set aside. Add turkey to pot; simmer for 10 minutes. Add spinach and puréed vegetables to pot; season with pepper; heat through
