Ingredients

    1 cup Purslane (raw) washed, large stems removed cucumber peeled, raw 1/2 cucumber 1/4 cup Beet greens, fresh 2 serving Tomatoes, Roma small quartered 2 medium Tomatillos quartered 1 cup Yogurt Plain Greek Yogurt, non-fat 1/4 cup Lemon Juice 1 tsp Garlic 1 1tsp Olive Oil 1 dash Pepper, black

Tips

Wild purslane can be harvested from anywhere, but be sure to wash it carefully. Its low growing nature means it can be pretty dirty. I let it grow when it pops up in my garden to be sure it is free from chemicals.


Directions

Combine vegetables. DRESSING Puree together Greek yogurt, oil, garlic, lemon juice and pepper. Top prepared veggies and mix well. Refrigerate at least one hour and serve chilled.
