Ingredients

    1 tbsp Extra Virgin Olive Oil
    1 large Onions, raw
    5 medium Carrots, raw
    2 stalk, large (11"-12" long) Celery, raw
    500 grams Split Peas
    5 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    6 cup (8 fl oz) Water, tap
    0.5 tsp Kosher salt, coarse, Morton (by BLUEJEAN_GIRL)
    0.5 tsp Fresh Ground Black Pepper (by BOWENFB50)
    2 bay leaves

Directions

In large heated pot, add oil. Then saute onions for 5 mins. Add carrots, celery, and S&P and cover, stirring regularly. Once veges soft, add pre-soaked split peas, potatoes, water and bay leaves. Bring to boil, boil for 10 mins, cover then simmer for 60 to 90 mins, until split peas are soft. Remove bay leaves, then puree. Enjoy!
