My mom loves seafood salad, but it's high in carbs. She's starting to cut carbs, and I wanted to put together a well-rounded, keto-friendly picnic for Mother's Day that includes seafood salad wraps. Ingredients

7 tbsp chopped Shallots
.5 cup, diced Celery, raw
0.25 tsp Kosher Salt (by 65PLUS1)
.5 tsp Paprika
.5 tsp Dill weed, dried
.25 tsp Pepper, black
1/2 cup Homemade Mayonnaise
FOR THE MAYONNAISE (yield: 2 1/4 cups)
1 large egg
1T lemon juice, fresh
1C extra virgin olive oil
1/8t black pepper
1/2t salt
Directions
FOR THE MAYONNAISE:
Blend egg and lemon juice in a blender/food processor until the oil turns into the white pudding you think of when you think of mayonnaise. Stop mixing, add salt & pepper, combine.
FOR THE DRESSING:
In a large bowl add all the ingredients together gently.
Coat seafood of choice in the dressing.
Refrigerate for an hour before serving.
