Ingredients

    1 tbsp Extra Virgin Olive Oil
    1/2 cup, Yellow Onions, chopped
    2 medium Scallions, chopped
    2 cloves Garlic, minced
    1 tsp Cajun Seasoning
    1 Beef Bullion Cube
    1 cup Long Grain Rice, uncooked
    2 cups Water
    1 15-oz can Black beans, drained and rinsed

Directions

Heat oil in a heavy-bottomed saucepan. Saute onions until soft. Add garlic and scallions and saute for 1 minute. Add Cajun seasoning and stir. Then add rice and cook until rice is slightly toasted. Add water and bullion cube and mix to combine. Cover the pan and bring mixture to a boil. Once you've reached a boil, decrease heat to lowest setting and cook undisturbed for 20 minutes. Turn off heat and let sit for at least 5 minutes. While rice is sitting, place the beans into a covered bowl and warm them in the microwave. Carefully fold the beans into the rice and serve immediately.
