Introduction

This is very close to what my mother used to make. I stuff it into roated bell peppers or acorn squash and serve with a salad. This is very close to what my mother used to make. I stuff it into roated bell peppers or acorn squash and serve with a salad.

Ingredients

    pkg of cornbread stuffing
    2 cups onions dicd
    2 cups celery diced
    2 cups carrots chopped
    1 tablespoon extravirgin olive oil
    2 egg whites
    1 cup soy milk
    1 sp garlic powder
    1 tbsp poultry seasoning

Directions

Pre-heat oven to 350 degrees.

Heat saute pan, add oil then onions, celery, and carrots. cook until onions start turning transparent.. Place vegetables in large bowl. Add corn bread stuffing, seasonings and mix well. Add eggs and enough soy milk to make mixture moist.

Place mixture in a casserole dish that has been sprayed with vegetable spray. Bake in pre-heated oven for 30 to 45 minutes.
