Introduction

Although you can use nonfat milk to make yogurt (and I provided a recipe for that on SP too), this version is my Keto yogurt. Although you can use nonfat milk to make yogurt (and I provided a recipe for that on SP too), this version is my Keto yogurt.

Ingredients

    2 cups Heavy Whipping Cream
    8 cups Whole Milk
    2 TBSP Pure Vanilla Extract
    2 TBSP Nancy's Yogurt
    2/3 Cup Sugar (optional)

Directions

1) Stir all ingredients EXCEPT YOGURT together in large pot on stove. 2) Warm on medium heat until you reach 180°. 3) Turn heat down to medium-low to maintain 180° heat for 30 minutes, stirring occasionally to keep milk from forming a crust on top. 4) Turn off heat. Wait until temperature decreases to 115°. 5) Remove one cup of milk and whisk it with yogurt. Then pour it into the pot and whisk it all together to incorporate well. 6) Pour milk mixture into large oven-safe bowl and place in the oven with the oven light on for 12 hours (This will maintain a temperature of approximately 115°). DON'T TOUCH IT OR MOVE IT. ANY MOVEMENT WILL KEEP THE YOGURT FROM SETTING PROPERLY. Make sure the temperature stays between 110°-125°. Any lower and the bacteria cultures won't grow. Any higher and it will kill the bacteria cultures. Serving Size: Makes 20, half-cup servings.
