Introduction

Quick lentil soup using Trader Joe's steamed lentils. Quick lentil soup using Trader Joe's steamed lentils.
Number of Servings: 6

Ingredients

    1 tbsp Olive Oil
    1 tsp Cumin seed
    0.125 tsp asafoetida (hing)
    0.125 tsp asafoetida (hing)
    3 medium Carrots, raw
    1 cup Cauliflower, raw
    1.5 cup Lentil - Trader Joe's Steamed Lentils
    1 tsp Salt (table)
    1 dash Pepper, black
    2 cup Imagine Organic Vegetable Broth

Tips

I add whey or lime to add more tanginess. You can top with yogurt or cilantro.


Directions

1. Heat olive oil.
2. Add cumin seeds and asafoetida until cumin seeds sizzle.
3. Add celery and cook for a couple of minutes.
4 . Add other vegetables and cook for about 5 minutes.
5. Add lentils and cook for about two minutes.
6. Add salt, pepper and vegetable broth.
8. Add more liquid if necessary.
9. Blend if you want.
10. Add more liquid if you want.

Serving Size: Makes 6 1/2 cup servings
