Ingredients

    1 box Uncle Ben's Long Grain Wild Rice Original Flavor
    1/2 container frozen spinach, thawed and drained
    1/2 package low-fat or fat-free cream cheese
    1 can 99% fat-free or fat-free chicken broth
    Optional: 1/4 cup toasted pine nuts

Directions

In a saucepan, combine rice, seasoning packet, and chicken broth. Cover and bring to a boil, then reduce heat and simmer until most liquid is absorbed (about 15-20 minutes). Add cream cheese and spinach, then mix thoroughly. Add toasted pine nuts if desired. Casserole can be served as-is, or if desired, you can place mixture into a lightly greased baking dish and bake at 350 degrees for 20-30 minutes until the top is crusty. Serves 4-6.

    What a surprisingly yummy, creamy, satisfying side dish. Instead of frozen spinach, I threw in a couple cups of coarsely chopped fresh spinach. My hubby loved it, too! - 10/25/12

    I made this for Thansgiving and it was awesome. I used a bulk wild rice blend and neufchatel cheese.I also added 1/2 c minced celery for crunch. It was maybe a little dry, so next time I will add a little milk to the cheese. Yummy and full of veggies! - 11/29/09
