This is a blended soup with very few ingredients. If you opt to use vegetarian broth to make it vegan you will want to add some seasonings or fresh herbs. Ingredients

    8.5 cup, sliced Zucchini
    32 oz Kirkland Chicken Stock
    4 tsp Garlic
    1 medium (2-1/2" dia) Onions, raw
    salt
    pepper

Directions

wash the vegetables and cut into large chunks. Place everything into a large soup pot and bring to a boil. Once boiling, reduce to a simmer and cook until vegetables are tender (about 20-30 min) Blend with an immersion blender. Add salt & pepper to taste. Serve warm or cold garnished with herbs & sour cream (not on ingredient list).
