Ingredients

    6 serving Beef - Stew Meat - Cubed - 4 oz raw (1.5lb)
    12 Red Potatoes, Small (1.75-2.5" diameter) about 3lb bag
    4 cups Broth, beef: Kitchen Basics, Unsalted, Beef flavor broth
    2 serving Garlic - minced (2 tsp)
    1 can, with juice Kroger Petite Diced peeled tomatoes in tomato juice - no salt added
    1 whole Bay Leaf
    1 tbsp Butter, unsalted
    .25 cup white, all-purpose flour, (2tbsp divided)
    0.25 tsp Kosher Salt
    0.25 tsp Black Pepper (Ground)
    1 tsp Dried Oregano
    1 tsp Paprika
    2 tbsp Extra Virgin Olive Oil
    4 serving Brown Gravy Mix McCormick (entire package)
    1 cup (8 fl oz) Water, tap

Tips

Serve with brown gravy and packaged dinner rolls for a tasty treats.


Directions

Mix flour with salt and pepper and dredge beef through it to coat. Set aside, and meanwhile measure out half the olive oil and heat in skillet over high heat. When hot, place one half the beef into skillet and cook until just browned, not cooked through. Just golden brown the flour coating on it. Next heat other half of oil in skillet then brown remaining beef and place all beef into a crockpot.
Next, rinse then cut into large bite-sized pieces the red potatoes then place them into the crockpot. Next add the entire carton of beef broth, all 4 cups, followed by the can of tomato pieces with juice, then the minced garlic, bay leaf, oregano, and paprika, and celery flakes.
Now cover with crockpot lid and set to cook for 4-6 hours on high, or 10-12 hours on low. If you want thicker towards end of cooking time, add the reserved flour to a tbsp of softened butter and mix well before adding to stew.
Mix McCormick brown gravy mix with a cup of water on stove and serve with stew, or add entire package to crockpot towards end on cook time for thickness and flavor.
