Eat as a salsa or as a salad, this is one of the yummiest, healthiest salads I have ever eaten. I have made it over and over as friends always want more and continually ask for the recipe! Ingredients

    1 can of black beans, rinsed
    1 cup frozen or fresh sweet corn
    1 pint grape tomatoes, halved
    1 avocado, diced
    1/2 small red onion, diced
    Juice of 1 lime
    1 tsp ground cumin
    1/2 cup chopped cilantro
    2 ounces of cubed mozzarella (optional)


Directions

Mix all together and you're done! Enjoy!

Makes a good size bowl of salsa or, if eating as a salad, six 1 - cup servings.
