Ingredients

    2.5 cup kale, chopped
    2.5 cup Edamame
    16 oz Baby Bella Mushrooms, chopped
    1 medium cucumber, chopped
    2.5 cups red cabbage, chopped
    10 oz shredded carrots
    2 cup dry Quinoa, cooked
    2 Med. Green Bell Pepper, chopped
    1.7 cup Frozen green peas, heated

    Dressing
    1 cup red miso
    1/4 cup rice wine vinegar
    1.5 tsp Ginger, grated
    1.5 tsp Sesame Oil
    1 tsp Chili paste
    1 tsp Soy Sauce
    1 garlic clove, minced
    1/4 cup honey
    a few dashes of black Pepper

Tips

Can cook quinoa in vegetable broth instead of water for added flavor


Directions

Whisk together dressing ingredients. Mix dressing with vegetables. Mix in cooked quinoa. Makes 14 1-cup servings.
