Introduction

Ingredients

    About 2 cups chopped lettuce mixed with some other fresh vegetables (I like bell pepper, cucumber, and red onion, but the choice is yours.)
    1 Trader Joe's mahi-mahi burger
    2 tbsp hummus
    2 tbsp Bolthouse Farms Classic Ranch Yogurt Salad Dressing (it must be this brand otherwise your calorie count will be much higher)
    2 tbsp guacamole

Directions

Start cooking the frozen fish patty. As it begins to thaw, break it up into small pieces with the wooden spoon, and let those pieces cook. Meanwhile, mix the lettuce/vegetables, guacamole, and dressing in a bowl. When the fish is almost cooked, put the two tablespoons of hummus on a small plate and microwave for 2 minutes. This will cause the hummus to fry itself and become a flat, and semi-hard disk on the plate. It will be easy to remove from the plate, however. Do so and crumble it over the lettuce in the bowl, making (sort of) hummus croutons. Once the fish pieces are cooked, add them to the salad as well. You're done!
