Ingredients

    hefty portion Baby Spring Greens Mixed
    .5 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    1 large whole (3" dia) Red Ripe Tomatoes
    2 serving Meijer Dry Roasted Sunflower Seeds, 1 oz/about 3 Tbsp
    1 fruit without skin and seeds Avocados, California (Haas)
    2 serving Egg, Large Soft - Boiled
    4 tbsp Extra Virgin Olive Oil
    3 tbsp Bragg Apple Cider Vinegar
    3 tsp Grey Poupon Dijon Mustard
    1 fl oz Lemon Juice
    6 serving Smithfield Bacon, Thick Cut (1 Slice)

Tips

For the dressing, I used the bacon grease from cooking the bacon. 6 slices made a bit less than 1/4 cup, so I topped off with EVOO.


Directions

1. In a large bowl combine your cruciferous greens blend, onlon, tomato, sunflower seeds and chopped up crispy bacon. If you need help on how to cook bacon, you might find this tutorial helpful.
2. Place all of your salad dressing ingredients together in a mason jar. Put the lid on the jar and shake until the dressing has completely come together. Pour the dressing over your salad and work it into the leaves. Use your hands if necessary. Set the salad aside.
3. Soft boil your eggs. I find that six minutes in boiling water tends to be my sweet spot for the perfect soft boiled egg. Once the eggs are done, peel them, slice them open and serve them on top of your salad with some avocado slices.
