Introduction

Very yummy salad, especially with spinach or leaf lettuce fresh from the garden. Tastes very indulgent. Very yummy salad, especially with spinach or leaf lettuce fresh from the garden. Tastes very indulgent.
Number of Servings: 4

Ingredients

    4 cups fresh baby spinach or other leaf lettuce
    2 scallions, finely chopped
    2 hard boiled eggs, yolk removed if you want
    4 slices bacon, diced
    1/4 c. vinegar (I prefer red wine vinegar but cider will work)
    1 tsp sugar
    1 tblsp water

Directions

Place lettuce in a large bowl. Sprinkle onions on top. In a medium skillet brown bacon until crisp. Do not drain. Add vinegar and water. Bring to a boil and add sugar. Cook until sugar is dissolved. Pour boiling mixture over salad and toss until coated. Serve immediately.
