Ingredients

16 oz 80/20 ground beef chuck
2 cup green giant cauliflower rice
1 Can Rotel tomatoes and green chillis
2 tbsp Ortega taco seasoning mix
1 tsp Onion powder
.5 tsp Pink Himalayan Sea Salt (Evolution Salt Co) (by TAMMAGDALENO)
.25 tsp Pepper, black
2 cup Colby and Monterey Jack Cheese shredded
3 cup salad - classic iceburg lettuce mix, 1.5cup ser
Tips
originally on lowcarbyum, I have tweaked it a bit to have lower carbs.
Directions
Brown ground beef in large skillet and drain while you are doing that prepare the cauliflower rice--or use leftover.
Once meat is drained add in Rotel--DO NOT DRAIN--cauliflower, and spices.
Stir together and bring to a boil, then reduce heat and simmer for 7-10 minutes.
Next stir in 1C cheese until melted.
Then sprinkle remaining cheese on top, place in a warm oven to melt the cheese.
serve hot topped with sour cream and lettuce
