Introduction

Ingredients

    1.0 cup Milk, 1%
    3.0 large Egg, fresh, whole, raw
    2.0 tsp Vanilla Extract
    4.0 tbsp Fat free half and half
    1.0 cup Quaker Oats - Quick 1 Minute - Dry
    2.0 serving Cara Cara Orange - 1 medium orange
    2.0 cup Aunt Jemima Original Pancake & Waffle Mix, 1/3 cup mix

Directions

*First you zest and juice both oranges into a measuring cup. * Next you add your milk, half and half and whisk. Then you add your eggs and whisk again. (I used a 4 cup measuring cup to give me room) *Add all your dry ingredients into a large mixing bowl and whisk those together *add your wet mixture and combine that with the dry until combined. (Don't overmix) *let your mixture sit while you heat a greased skillet to medium heat. *start spooning your pancake batter 1/4 cup at a time into rounds. *keep going until all your cakes are done. Storing: These are good to store. Place cakes in a big zip lock bag (they taste better the second day) and whenever you want one pop it in the toaster or microwave for a bit and boom breakfast or a yummy dessert. I eat mine with light syrup and a spoon of nonfat vanilla yogurt. They taste similar to an orange fruit loop. (In my opinion) Tips: Its nice to add chopped nuts or seeds too! *Also if your mixture seems a bit dry add in 1/4 cup of water and stir/fold gently. *if it seems to wet add in 1/4 cup pancake mix. Enjoy! Serving Size: Makes 10-12 pancakes- 1/4 cup servings
