Introduction

Ingredients

    2 large Egg
    1/4 cup Black Beans
    1/4 Avocado
    1 cup Baby Spinach
    1/4 small Onions, Diced
    1 Link Turkey Breakfast Sausage
    1/4 tsp Sweet paprika
    1/4 tsp Cumin
    1/2 tsp Salt
    3/4 tsp Olive Oil

Directions

1. Crack eggs into a bowl and add a pinch of salt. Whisk with a fork until will scrambled, and set aside.

2. In a saute pan, heat half the oil over medium-high heat. Add sausage and onion, along with the cumin, paprika, and salt, and heat until tender. Add spinach, and cook until wilted (it'll shrink a lot!). Scrape the mixture into a bowl, and wipe pan clean.

3. Add the reminder of the oil, and adjust heat to medium-low. Add eggs and let cook until set, 3-5 minutes.

4. Remove to plate, and spread filling over half the omelet. fold over to create half-moon shape.
