Ingredients

    6.0 tbsp Butter, salted
    1.0 cup (8 fl oz) Yogurt, plain, whole milk
    3.0 large Egg, fresh, whole, raw
    0.25 tsp Salt
    1.0 tsp Vanilla Extract
    2.0 cup, unthawed Blueberries, frozen (unsweetened)
    0.5 fl oz Lemon Juice
    3.0 tsp Baking Powder
    6.0 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    12.0 tsp coconut sugar, Madhava" Organic (1 t)
    2.0 tbsp Coconut Flakes, Organic, Unsweetened

Directions

Preheat oven to 325F and grease a standard 12 muffin tin very well (or line with paper liners, if youre muffin tin is not very non-stick). In a large bowl, whisk together the almond flour, sweetener, coconut flour, baking powder, lemon zest, and salt. Stir in eggs, yogurt, butter, and vanilla extract until well combined. Gently fold in blueberries. Divide batter among prepared muffin cups and bake 30 to 40 minutes, until set and a tester inserted in the center comes out clean. Serving Size: Makes 12 muffins
