Ingredients

1 lb dried white beans
1 tsp salt
1/4 cup cider vinegar
1 large bay leaf
1 medium sized onion, chopped
1 can (5.5 to 6 oz) tomato paste
1 tsp minced garlic (probably one glove)
1/2 tsp rosemary, crushed
1/2 tsp basil
1 tbsp cinnamon (or more to taste)
1 tsp nutmeg
Brown sugar style Sugar Twin or Splenda to taste (1/4 cup or more)
1 tsp prepared mustard
Directions
Clean and sort the white beans in cold water. Do not soak. Place in a large saucepan with enough cold water to cover by about 1/2 inch. Add vinegar, salt and bay leaf (just one leaf). Boil for 10 to 15 minutes (add boiling water when level drops). Transfer beans to crockpot (slow cooker) using a slotted spoon. Reserve liquid. Add remaining ingredients to the liquid. Bring to a boil. Pour the liquid over the beans. Try to push the bay leaf down into the center of the beans so that it does not float. Cook in the crockpot on high for 2 hours (or until it bubbles for a while). Reduce the heat to low. Cook for another 6 to 8 hours (until the beans absorb the liquid). Let cool. Serve reheated or cold. Makes about 8 to 10 cups. One cup = one serving
