Ingredients

1 whole wheat flour tortilla
1-2 Tbsp fat free thousand island salad dressing
2 Tbsp sauerkraut, drained (I use Silver Floss)
2 slices deli corned beef
2 slices Swiss cheese
Tips
You can lower the fat levels by using turkey pastrami and low-fat Swiss cheese.
A tortilla is not going to soak up as much juice as rye bread would so this can be a very drippy sandwich.
Directions
1. Lightly spray back of tortilla with cooking spray and place that side down on plate or cutting board.
2. Spread dressing over ˝ of the tortilla so you have a semicircle with dressing and a semicircle without.
Lay cheese slices over dressing.
3. Place corned beef slices over cheese then cover corn beef with drained sauerkraut.
Fold half of tortilla without dressing over ingredients.
4. Brown one side in non-stick skillet, flip and brown the other side (2-3 minutes per side), plate and enjoy!
Serving Size: Makes 1 quesadilla.
