Ingredients

    4 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    .5 cup Pecan Meal (by HOOK7890)
    1 tsp Baking Powder
    2 tbsp Xanthan Gum - Bob's Red Mill (by CEELEE53)
    2 tsp Grey Poupon Dijon Mustard
    .5 tsp Pink Himalayan Sea Salt (Evolution Salt Co) (by TAMMAGDALENO)
    1 large Egg, fresh, whole, raw
    3 tsp Organic Valley Ghee Butter
    2 tsp Brown Mustard Seed (Crushed)

Tips

I came up with these based on a recipe I used to make that coated chicken breast with a mustard mixture and crushed pecans and then pan fried in butter. Could have this with Keto but messy and time consuming to make. This allows for a quick snack or meal with the same flavors.


Directions

in food processor, combine dry ingredients until blended. With processor running slowly add beaten egg, mustard, melted ghee, and water. check dough, if too sticky add a little more almond flour. make a ball from dough and refrigerate for at least 1 hr. When ready to cook, heat skillet to med heat. divide dough into 6 pieces. Form pieces into balls and then roll out between two pieces of wax paper. cook each side in skillet until lightly brown. I cook with butter, you could cook dry. For more bite you can add more mustard seed and/or pepper.
