Introduction

Ingredients

1 cup green lentils
1 garlic clove, crushed
1 small onion, chopped
4 tbsp butter
2 tbsp sunflower oil
1 1/4 cups basmati rice
2 tsp ground coriander
2 tsp cumin seeds
2 cloves
3 cardamom pods
2 bay leaves
1 stick cinnamon
4 cups vegetable broth
2 tbsp tomato paste
salt and black pepper to taste
3 tbsp fresh coriander or parsley, chopped
Directions
1. Cover the lentils with boiling waterand soak for 30 minutes. Drain and boil in fresh water for 10 minute. Drain once more and set aside.
2. Fry the onion and garlic in the butter and oil in a large saucepan for about 5 minutes.
3. Add the rice, stir well to coat. Then stir in the spices. Cook low for about a minute.
4. Add the lentils, broth, tomato paste, and seasoning. Bring to a boil, then cover and simmer for 20 minutes until the broth is absorbed and the lentils and rice are just soft. Stir in the fresh herbs and check the seasoning. Remove the bay leaves and cinnamon stick.
