I eat this anytime..made ahead it is great cold. I pack it up for plane rides. I have tried many different vegetables and like the combination of sweet peppers the best. I eat this anytime..made ahead it is great cold. I pack it up for plane rides. I have tried many different vegetables and like the combination of sweet peppers the best.
Number of Servings: 5

Ingredients

    1 cup Brown rice
    3 cups Water
    1 cup diced yellow, orange and red pepper
    1/2 cup chopped red onion
    1/2 cup chopped fresh parsley
    1 tablespoon dried cilantro
    1 tablespoon Spice Hunter brand Mexican seasoning
    2 tsp salt
    1 tsp fresh ground pepper
    *salt and pepper, add more or less to taste
    Combine and microwave until rice is almost tender (about 30 minutes)
    add 1 cup black beans
    cook until all water in evaporated
    stir in 1 cup fresh diced tomato (yum)
    If you eat this hot, top with a bit of cheese
    0r cold, mix in 1 cup shredded Colby jack cheese
