Ingredients

48 oz 85% lean ground meat (by WATERSKIERCP)
1 cup, chopped Onions, raw
.5 cup, strips Green Peppers (bell peppers)
7 cup (1" pieces) Cauliflower, cooked
12 oz Cream Cheese
.5 cup Butter, salted
4 tbsp Half and Half Cream
3 cup, shredded Cheddar Cheese
Tips
I didn't list seasoning since I mix it up. I use a lot of combos by Savory Spice. Favorites are Mt Evens and Bajan. You can also add more veggies depending on your diet. WE are on keto so no lima beans, corn etc. I make a large batch and freeze single servings.
Directions
cook off meat and veggies. Season as desired I love Mt Evens seasoning by Savory spice. Drain liquid and put meat in bottom of baking dish.
Rice 2 heads of raw cauliflower with food processor. Cook in microwave until tender. Usually 8-10 min for this amount. Add butter and cream cheese cut in cubes to hot cauliflower, add cream, salt pepper and any other seasonings you like. Use a hand held mixer to whip until completely mixed. Add cheddar cheese reserving some for the top. Layer over meat and top with cheese. Bake at 350 for 30 min. This freezes well. I use limited veggies and do not thicken the meat with flour due to allergies.
Serving Size: This is filling so usually one large serving spoon full is plenty. serve with salad or asparagus.
