Ingredients

1c fresh or frozen blueberries
1/2c Splenda divided
2c skim milk
6T yellow cornmeal
3/4t lemon rind
1/2t vanilla
1/4t salt
Directions
Makes 4 servings
Combine 1/4c Splenda w/blueberries in microwave safe bowl. Cover w/wax paper and microwave on HIGH for 1 minute for fresh blueberries and 3 minutes for frozen blueberries or until thoroughly heated and Splenda dissolves, stirring halfway.
Combine 1/4c Splenda, milk, cornmeal and lemon rind in a 2-quart glass measuring cup. Stir with a whisk. Microwave at HIGH for 7 minutes, or until thick and bubbly, stirring every 2 minutes. Stir in vanilla and salt.
Serve with blueberry topping.
