Ingredients

    1.0 large Egg, fresh, whole, raw
    0.5 tsp Cinnamon, ground
    0.5 tsp Salt
    3.0 medium (7" to 7-7/8" long) Banana, fresh
    1.0 cup, unthawed Blueberries, frozen (unsweetened)
    0.5 cup pieces or chips Walnuts
    1.0 tsp Baking Powder
    1.0 tsp Baking Soda
    0.25 cup, unpacked Brown Sugar
    1.0 cup Flour - Gold medal all purpose flour
    3.0 tbsp Challenge Butter
    0.5 Cup Woodstock 5 Grain Cereal
    1.0 tsp Pure Vanilla Extract

Directions

Mash bananas (very ripe bananas work best). Stir in egg, brown sugar, and vanilla. Melt butter and add to mixture. In a separate bowl combine flour, baking soda, baking powder, salt, and cinnamon. To the dry ingredients, add oatmeal and walnuts. Combine wet and dry ingredients. Coat blueberries in a light dusting of flour and gently stir into mixture. Do not over stir! Divide mixture into 12 paper-lined muffin tin cups. Bake at 375 for 20 minutes. Cool on cooling rack. Serving Size: Makes 12 regular size muffins
