Ingredients

1 cup (not packed) Cottage Cheese, 1% Milkfat
8 oz Mozzarella Cheese, part skim milk
1 tbsp Basil
1 clove Garlic
0.50 medium (2-1/2" dia) Onions, raw
1 tbsp Amore Tomato Paste
0.50 serving medium cauliflower head
1 cup Morningstar Farms Grillers Crumbles
0.25 cup Bella Rosa Shaved Parmesan
1 cup Hunt's Fire Roasted Diced Tomato
Directions
Preheat oven to 375F. Bring a large pot of water to a boil. Add cauliflower florets and cook for 3 minutes. Remove from heat. Drain and set aside.
Heat spray olive oil in a large skillet over medium heat. Add onion and cook until softened. Add garlic and red pepper flakes and cook for 1 minute. Add Morning Star griller crumbles and salt and pepper and cook just until hot.
Stir in tomato paste and basil/oregano mix and cook for two more minutes. Stir in crushed tomatoes.
Pour Grillers sauce over the cauliflower and stir to combine.
In a baking dish spread out half the cauliflower. Top with half the cottage cheese, mozzarella and Parmesan.
Add the rest of the cauliflower and top with the remaining cheeses.
Bake for 25 minutes and serve hot.
