Ingredients

5 TBLSP Extra Virgin Olive Oil
1 Medium Raw Onion
4 Cloves Garlic
2 Cup Arborio Rice
4 Red Ripe Tomatoes
1/2 Cup Frozen Green Peas
4 oz. Water
3 oz. Apple Juice
2 TBLSP White Wine Vinegar
4 Cups Vegetable Broth
1 tsp Salt
1/2 tsp Black Pepper
32 Large Uncooked Shrimp
2 TBLSP Basil
2/3 Cup Grated Parmesan Cheese
Directions
It's best i you chop these items before you start cooking:
Onion, finely chopped
Garlic, finely chopped
Tomatoes, diced
Basil, finely chopped
Once that is done heat 4 TBLSP of the Olive Oil in a LARGE saucepan over medium heat an cook onions, stirring occasionally for about 5 minutes, or until soft.
Add the Garlic and Arborio Rice and cook for 1 minute, stirring to coat the rice with the oil.
Add the Tomatoes, Peas, Water, Apple Juice, Whitw Wine Vinegar, broth, Salt, and Pepper, bring to a boil, cover with lid and reduce the heat to low. Simmer gently for 15 minutes WITHOUT LIFTING THE LID.
Remove the lid and quickly place shrimp on top of rice, cover and cook for 5 minutes.
Stir in the the Basil, Cheese, and 1 TBLSP Olive Oil.
Serve.
