Ingredients

1.5 cup Trader Joe's Gluten Free All Purpose Flour
2 tsp Baking Powder
.5 tsp Baking Soda
.5 tsp salt
1 tbsp Granulated Sugar
1 tbsp Oil (I used Sunflower Oil)
.75 cup Milk (2% or Whole)
1 tsp Vanilla Extract
4 large eggs, separated
Tips
I make a batch of waffles, let them cool, and freeze them. Then they are easy to pop in the toaster oven any time you want a waffle!
Directions
Pre-heat a waffle iron.
In a large bowl, mix the flour, baking powder, soda, salt and sugar together.
In a separate bowl, whip the egg whites until they form stiff peaks.
In a small bowl, whisk together milk, yolks, vanilla and oil.
Add the milk mixture to the dry ingredients and blend together. With a rubber spatula, slowly fold in egg whites with the rest of the ingredients. The entire mix should be light and fluffy.
Spray waffle iron with cooking spray/oil and begin making waffles. Follow the waffle machine instructions or cook about 3 minutes on each side. (In my waffle iron it was about 2 and 1/2 minutes per waffle)
