Introduction

Ingredients

    3 cups thinly sliced zucchini
    1 cup chopped onion
    3 gloves garlic, minced
    3 tablespoons olive oil
    1 can diced tomatoes, undrained
    8 leaves fresh basil (or 1 tsp. dried), shredded
    1/4 tsp. crushed red pepper or cayenne
    1/2 tablespoon capers, drained

Directions

Heat olive oil in skillet. Add onion and garlic. Cook over medium high heat until onions begin to soften somewhat. Add zucchini. Cook and stir occasionally until zucchini begins to soften. Add tomatoes with juice, basil, capers and red pepper. Bring to boiling then reduce heat and simmer until juice is reduced and vegetables are done. Makes two generous servings for pasta.
