Ingredients

    16oz. Penne Rigate Pasta
    1 Tbsp. Olive Oil
    1 Green Pepper, coarsely chopped
    2 Tbsp. Garlic, chopped
    29oz. can of Spaghetti Sauce
    14.5oz. can of Italian-style Stewed Tomatoes
    14oz. can of Quartered Artichoke Hearts
    3.8oz. can of Sliced Black Olives

Directions

Saute green pepper and garlic in olive oil until soft. In a separate pot, heat tomato sauce and stewed tomatoes until heated through. Add sauteed pepper and garlic to sauce, along with artichoke hearts and olives. Heat through. Pour over pasta and mix well. And if you're feeling saucy, you can also sprinkle a little bit of parmesan cheese on top ;o)

This is a recipe I made up, so I'm not really sure how big each serving is, but I'm going to guess and say about 1-1/2 cups.

    This recipe was simply delicious! Due to sodium restraints, I left out the olives, and didn't have artichoke hearts handy so used summer squash and eggplant instead. Also used no-salt-added diced tomatoes instead of the italian stewed.....even making those changes, this was an awesome dish! - 8/21/08
